I'm usually the only defensive engineer. I usually put my sentry right outside our spawn facing the courtyard as it covers the most doors. Usually I'm quite good at defending and getting several kills, but after a number of tries the offense starts glitching and using the shooting through the floor exploit. This completely ruins everything for me as there is no way to see where they are and I'm a sitting duck.. Then if I move my sentry they take advantage of the fact that its not covering the top floor anymore.

I tend to turtle up on 2fort because i hate the map
So when i play engy,i put a sentry (ill give you directions because i havent got a picture)
Walk out of the main resupply (not the one on the balcony) and turn right.Go down the stairs and go through the left doorway.i build my sentry here, quite close to the crossroad bit but far enough back so it cant be destroyed with grenades

Another good place to mp your sentry on 2fort is in the entrance area between the cross roads and the area outside of main spawn.I you put it there, you gain several powerful benefits. Once fully upgraded, it can cover both entrances to the intel, it can be exceptionally good at tying up the crossroads as Demo's can't sticky near your sentry without getting into line of fire. Also, as obviously the opposing team can't walk through your sentries, it stops faster classes like the scout just missioning it past to get to the intel. It also severely limits any incursions of Soldiers and Demo's sticky/rocket jumping, although that's your weakest point so it would be wise to keep your shotgun handy to keep your stuff safe. That aside all youhave to worry about is spy spamming sappersand you should be fine.

Regarding your initial setup, if you can't get hold of any help from your team in dealing with them hitting it from below, have you considered a tele entrance in the hay loft to the intel, with your dispenser downstairs next to it, as the sentry goes down, you hop through, and be well on your way to a level 3 in the intel in seconds.

Then rinse, rebuild repeat.

I usually play offensive engy

just get as close as possible, build sentry, build a teleporter near the sentry so your teammates can help you to defend your sentry...
then you just try to push them back by rebuilding your sentry.

I usually build on defense in between the two entry points to the intel room area.  The trick is to build in a spot where either solo Soldiers will have to make themselves vulnerable to fire rockets to your SG's perch, and/or Demomen dont have a good deflection point to lob grenades in from cover. On offense, I usually build in the doorway to the stairs leading to the sewer on homebase side.  Its real tricky to setup here initially as the opposing rush will usually screw you over if you arent fast enough, but I also play on Xbox and I find that there arent many Scouts who can consistently enter/exit entirely via the roofs/battlements so they usually end up being forced to succumb to my SG.  The trick to offensive Engineering goodness (in my experience) is to move your setup around a little to keep anti-Engineer units on their toes rather than just rushing in and thinking they know exactly where to go and what to do the second they enter your base.

are there any good spots for offensive engis in 2fort?  Besides the sewers wherever I build my SG in an offensive position it gets destroyed  before even being finished building

The very corner where the wall meets the fence on their base, as well as in the water.
